May gives us another reason to celebrate the great outdoors because May is National Barbecue Month. Memorial Day is at time to remember those in our military who gave their lives for our country, but it’s also a time when barbecue season officially kicks off.

No other method of cooking can quite match the outdoors flavor of fresh corn grilled in its husk. Before it is cooked, the corn is slathered with chile-lime spread.

• 1 ½ pounds ground buffalo or ground beef • 1 medium onion, finely chopped • 2 or 3 jalapeno chilies, seeded and finely chopped • 1 clove garlic, finely chopped Mix ingredients together. Shape into six patties, each about ½ inch thick.
