SWEET POTATO FRIES
Size: about 1/2 cups fries and 1 tablespoon dip | Servings: 6
INGREDIENTS
• 1 1/2 pounds sweet potatoes (about 4 medium potatoes) • 1 tablespoon vegetable oil
• 1/8 teaspoon salt DIP: 1/4 cup light mayo 1 tablespoon ketchup 1/8 to 1/4 teaspoon cayenne pepper, chili powder or paprika INSTRUCTIONS
Rinse potatoes under running water. Peel if desired or just scrub potatoes well. Cut the potatoes in half lengthwise. Lay each potato half flat and cut into half-moon shapes. Combine potatoes, oil, and salt in a bowl. Stir so potatoes are covered with oil.
Grease cookie sheet with cooking spray or vegetable oil and lay potatoes in a single layer.
Bake at 425 degrees F for about 30 minutes, turning after 15 minutes.
While potatoes are baking, mix the dip ingredients.
Serve immediately. Other ways you can use sweet potatoes or yams in baking of cakes, pies, breads, cookies, in soups, stews, and just as a vegetable.

1 can sweet potato mashed and spread in buttered casserole, sprinkle with brown sugar, mini marshmallows and bake in 350 degree oven until warmed and marshmallow are toasted. You can also add pecans on top of sweet potatoes.
