Pecos County to Host Screwworm Seminar

In a partnership between the Texas A&M AgriLife Extension Service of Pecos County, the Texas Farm Bureau, and the Texas & Southwestern Cattle Raisers Association, there will be a New World Screwworm seminar held in Pecos County on July 29.

Armed VA Clinic incident ends peacefully

An armed individual was safely transported to the hospital for evaluation Wednesday afternoon following an approximately 90-minute law enforcement response at the Fort Stockton VA Clinic. According to Pecos County Emergency Management Coordinator Jessie Dominguez, the initial call was received at approximately 3:35 p.m.

Texas first state to mandate Bible reading in school

The State Board of Education gave final approval last week to a new required reading list for every grade level and also passed a rewrite of the state’s social studies requirements for kindergarten to eighth grade, the Austin American-Statesman reported. Both plans include Biblical concepts, essentially making the state the first in the nation to mandate the teaching of Christianity in public school classrooms.

INGREDIENTS: For the Peach Filling 2 pounds (about eight medium) firm, but ripe summer peaches, pitted and cut into roughly ¾ inch cubes (about 5 ½ cups) ½ cup granulated sugar 2 tablespoons fresh lemon juice from one lemon 2 tablespoons of bourbon (optional) ¾ teaspoon of cornstarch Pinch of kosher salt Generous pinch of freshly grated nutmeg (optional) 2 drops of almond extract (optional) For Biscuit Topping 5 ¼ ounces (1 cup) all-purpose flour ½ cup granulated sugar (4 ounces) divided 1 ¼ teaspoons baking powder ¾ teaspoon kosher salt 6 tablespoon 93/4) stick chilled, unsalted butter, cut into ¼ inch pieces ½ cup whole milk Ice cream or whipped cream for serving DIRECTIONS: Step 1: For the peach filling: preheat the oven to 400 degrees and set rack to middle position. In a large bowl, combine peaches with sugar, lemon juice, bourbon, cornstarch, salt, nutmeg, and almond extract.

Always a great friend to the Avalanche, Wood’s culinary expertise is well known in the Big Bend, where he and his wife do pop-ups from time to time, but their main work (at least when hunting season isn’t in full swing) is catering.
