GRILLED JALAPENO BUFFALO BURGERS

• 1 ½ pounds ground buffalo or ground beef • 1 medium onion, finely chopped • 2 or 3 jalapeno chilies, seeded and finely chopped • 1 clove garlic, finely chopped Mix ingredients together. Shape into six patties, each about ½ inch thick.

May gives us another reason to celebrate the great outdoors because May is National Barbecue Month. Memorial Day is at time to remember those in our military who gave their lives for our country, but it’s also a time when barbecue season officially kicks off.

Last week we talked about ensuring that you go to church. The next question asked by almost everyone is, “But which church should I be going to?” The answer to this question is not nearly as easy as some would think.

Infrastructure improvements to be made

Pecos County Water Control and Improvement District No. 1 is moving forward with completion of requirements for the USDA note and grant to improve and increase the infrastructure in the district. When the improvements are installed, the district will be able to provide good, clean, drinkable water to more customers.
